Coconut yogurt superfood breakfast bowl


Having my delicious superfood breakfast

When in a hurry, or even if not, this is my favourite go to breakfast. For those on a paleo diet this is great because there are no carbs. It is also gluten, sugar and dairy free. If you want it to be even more GL and paleo friendly, omit the apple and just add the summer berries.

Coconut Superfood breakfast bowl

Ingredients:

A few dollops of coconut yoghurt (or any other plain yoghurt if not following a dairy free diet)

Handful of sunflower seeds

Handful of pumpkin seeds

Sprinkling of golden linseeds (optional)

Sprinkling of raw cacao nibs

Spoonful of maca (optional)

One small finely chopped apple

Handful of any summer berries: strawberries, raspberries, blueberries (or a mixture)

To make:

In a pan, dry roast first the sunflower seeds, then the pumpkin seeds and finally the linseeds. (Make sure you put a lid on before toasting the linseeds because they will fly everywhere and don't burn them.)

I deliberately haven't put exact quantities because this is a recipe that you will add or subtract to but it is just so delicious, you can't go wrong. You could also add some chopped nuts as well as or instead of the toasted seeds.

Spoon the yoghurt into the bowl, chop up the apple, add the summerfruit and then add all the dry ingredients. Stir it all around and enjoy.
